But, one place you might not expect to find our sweet and creamy orange friend is in pasta sauce. That’s where Cucina Antica Tuscany Pumpkin Pasta Sauce comes in.

Inspired by Italy’s rustic harvest, Chef Neil Fusco has created a unique sauce made with peak-harvested pumpkin, flavorful San Marzano tomatoes, and an aromatic combination of garlic, rosemary and sage, all simmered with a touch of cream and perfected in small batches.

I like to roast tomatoes, onion and garlic either in the oven or grill then stick them in the blender with some extra virgin olive oil, fresh basil and flat leaf italian parsley - it's great served room temperature in the summer. The Tuscany Pumpkin Pasta Sauce sounds delicious!!!

You never can have enough fruits veggies in a pasta sauce, especially in the summer and early fall. Never forget that tomatoes are fruits so adding chunky fruits to a pesto pasta sauce is a mouth-watering alternative to an overpowering tomato base. I like a sweet and savory pasta sauce with equal amounts of chopped apples sporting different color skins cooked with small chunks of eggplant and squash. The more colorful the better. A tangy and colorful flavor extravaganza is created when mixed with a pesto that's homemade with virgin olive oil, and fresh basil, pepper and dried parmesan. Talk about harvest healthy American fare – you can't beat this. While butternut squash is my favorite, any other squash including pumpkin (except a stringy spaghetti squash) will do. A pumpkin pesto also can be whipped up for a second or even third day helping. And to think that I rarely ate squash when I was growing up. Oh, the shame of missing all that sumptious flavor.

Up to this point, my favorite non-traditional pasta sauce has been a butternut squash sauce (I'm a HUGE fan of fall veggies), but I can't imagine anything could top this tuscany pumpkin sauce...PUMPKIN IS MY FAVORITE! I would absolutely love to make dinner for all of my friends using the sauce for a fun spin on a fall classic. :)
