Darned Good Deviled Eggs

When I was pregnant with my second child, I craved hardboiled eggs. At first, I ate them plain or with a sprinkle of sea salt flakes. Then I used them as a sandwich filling at breakfast or lunch. Finally I started making deviled eggs for one…well, technically two. My experimentations with deviled egg recipes ranged from using dry mustard to capers to bacon to chives. As many deviled eggs as I ate from one trimester to the next, I never did get sick of them.

Served as an hors d'oeuvre, enjoyed with a simple mixed salad for a light lunch or gobbled up by an expectant mother as an afternoon snack, deviled eggs are quick, easy and delectable. They seem like a simple classic crowd-pleaser, yet they have more variations than meet the eye.

Before sharing our secret ingredients, let’s agree that the hard boiled eggs recipe must be mastered first because no one likes overcooked, rubbery eggs. No one. I actually made deviled eggs for Superbowl Sunday for the first time. I bought Creme Fraiche from Whole Foods to use in the mixture, along with chopped bread & butter pickles, dijon mustard, mayo, dash of hot sauce, and topped with a sprinkle of both cayenne and smoked paprika. They were delicious for my first time and enjoyed by everyone!

I recently experimented with my deviled eggs recipe by giving them a Maryland twist! Lump crab mixed with diced sweet pickles, dill, mayonnaise & topped with scallions & finished a dash of Old Bay seasoning for a Cajun kick! I plated them on a contemporary long serving dish... They looked beautiful, tasted delicious & were a big hit at my dinner party!

It has been my job to make the deviled eggs (which was every Sunday) since I was about 8... Needless to say, I am very particular about them... 1. You've got to buy your eggs a week in advance so that they have time to settle and make them so much easier to peel. 2. You have to use Hellmann's Mayo and Gulden's Spicy brown mustard (don't skimp on the mustard!). Never use Miracle Whip (or any sweet dressing) for deviled eggs please, its sacrilege! Top with smoked paprika. My mother insists on finely chopped celery in hers. Now and then I'll grate a little onion in there. So I guess my only secret is that those two brands are irreplaceable for deviled eggs to me!

My favorite way to give my deviled eggs an extra special bit of love is to add Cayenne spiced cooked potatoes in with the creamy mustard and mayonnaise mixture topped with a extra sprinkle of cayenne pepper and maple bacon. LOVE it!

actually when i have a craving for boiled eggs dressed up, make a spicy version. if you want a deviled egg add fresh chopped jalapenos and cilantro to the yolks with mayo salt and pepper, if you are more adventurous: cut a jalapeno in half (seed it or not your choice) place egg salad (eggs mayo s/p cilantro) in it like you would a deviled egg and these are devilishly good or i make egg rolls add the jalapeno and cilantro to the egg salad take a nice leaf of butter lettuce or what you like and roll up like an egg roll!

I like to coat the egg white with a spice that pairs well with my filling choice. For example, if I add chopped shrimp or crab in my filling, I'll dip the egg white in old bay seasoning to create a "rim". If I add chopped bacon in the filling, I'll rim the egg with a BBQ rub.

My favorite ingredient to put in deviled eggs is smoked salmon and a combination of herbs. I typically use chives, dill, and some tarragon. These flavors create a delicious flavor that my friends and I LOVE!

I love dressing my deviled eggs the same way I love dressing my baked potatoes...loaded! I make these loaded deviled eggs during potlucks, BBQs or Thanksgiving and they're always gone in no time. I mix the yolks with a mayo, mustard, sour cream, shredded sharp cheddar and crumbled cooked bacon or pancetta. I top with chives and a dash of paprika. Yum!

I use sweet dill pickle relish, Thousand Island dressing, a bit of yellow mustard and a little ketchup to make my deviled eggs Devilish. I sprinkle the top with paprika and a little fresh parsley. YUMMY good. Everyone loves them.
