Darned Good Deviled Eggs

When I was pregnant with my second child, I craved hardboiled eggs. At first, I ate them plain or with a sprinkle of sea salt flakes. Then I used them as a sandwich filling at breakfast or lunch. Finally I started making deviled eggs for one…well, technically two. My experimentations with deviled egg recipes ranged from using dry mustard to capers to bacon to chives. As many deviled eggs as I ate from one trimester to the next, I never did get sick of them.

Served as an hors d'oeuvre, enjoyed with a simple mixed salad for a light lunch or gobbled up by an expectant mother as an afternoon snack, deviled eggs are quick, easy and delectable. They seem like a simple classic crowd-pleaser, yet they have more variations than meet the eye.

8 hard-cooked eggs 1 package (8 ounces) cream cheese, softened 2 teaspoons Dijon mustard 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 cup of fresh persian cucumbers,cut into cubes & 3 bacon strips, cooked and crumbled Best deviled eggs. Enjoy =)

A cute idea for Deviled Eggs is to make them into a chick.. After hard boiling, cooling & shelling, cut the slice a thin slice off the bottom of the large end [son egg can stand up]. Cut top 1/3 of egg off in a zig-zag pattern. Remove top very carefully. Carefully remove yolks, preserving the white unbroken. Make your usual deviled egg recipe and chill. Overfill the yolk mixture into bottom egg, mounding up to form chick head. Place a beak made out of carrot slivers and eyes made out of pieces of olives on chick head. Place top of egg on top to form a chick peeking out of egg.

I add some green and blue food coloring to the egg yolks, top off with some cooked ham sliced into very fine julienne curls and voila - green eggs and ham! Perfect for St. Patrick's Day parties. :-)

Mine are very simple. Boil the eggs. Cut them in half and talk out the yolk. Mash them with some regular yellow mustard and low fat mayo. I use more mustard to make it tangier. Fill each half. Sometimes I add a little horseradish to the mix. Either way sprinkle Hungarian paprika on top!

A good friend taught me a great recipe, mix in avocado and lime juice. It saves me half the calories and my 1 year old loves them too!

A Favorite, Deviled egg's..endless way's to make them . I make them different each time depending on what I have fresh on hand at the time. I start with fresh eggs,boiled just right not to over cook about 12 min. this gives a tender egg ,yet done. cool them ,slice. put yolk in bowl gently mash with fork. I add mayo,, tsp of yellow mustard,season salt, with paparika. Fresh mix of olives from olive bar at Whole Foods,,I dice them up ,,mix in .stuff Egg then top with a thin slice of olive. .sometime's I use the jar tapenade from Whole foods,It's just as good..so simple yet so yummy.Better the next day...Brenda

Truffled Deviled Eggs Mix hardened egg yolks with mayo and 3 tsp of truffle oil in a blender. Take out mixture and pipe into deviled eggs. Chive oil- To make chive oil blend 1/4 cup olive oil in blender with a handful of chives. Then strain through a sifter into another container to get flavored chive oil. Top deviled eggs with chive oil and flying fish roe as a garnish. Fancy, Truffled Deviled Eggs with Chive Oil are ready to eat!
