Darned Good Deviled Eggs

When I was pregnant with my second child, I craved hardboiled eggs. At first, I ate them plain or with a sprinkle of sea salt flakes. Then I used them as a sandwich filling at breakfast or lunch. Finally I started making deviled eggs for one…well, technically two. My experimentations with deviled egg recipes ranged from using dry mustard to capers to bacon to chives. As many deviled eggs as I ate from one trimester to the next, I never did get sick of them.

Served as an hors d'oeuvre, enjoyed with a simple mixed salad for a light lunch or gobbled up by an expectant mother as an afternoon snack, deviled eggs are quick, easy and delectable. They seem like a simple classic crowd-pleaser, yet they have more variations than meet the eye.

Before sharing our secret ingredients, let’s agree that the hard boiled eggs recipe must be mastered first because no one likes overcooked, rubbery eggs. No one. My deviled eggs are classic but I have a secret ingredient. I rarely measure but could come up with ideal measurements....I've given suggested measurements below. 12 hard boiled eggs 2 tsps salt or to tast 1/4-1/2 cup mayonnaise mashed in to be smooth Secret ingredient: garlic juice/oil from the chopped jar of garlic about 2 tsp or to taste I like to put the mixture in a plastic sandwich bag and squeeze it in the whites, cake decorator style. Then I stick with traditional garnishes like green olives and paprika. It's the garlic juice that makes this recipe.

We used to LOVE Deviled Eggs at our house, but when we found out our daughter could no longer have Lecithin, egg yolks were out, so thinking a little harder and being a bit more creative was in order. What would I do to make the same "pretty" Deviled Eggs so her's would still taste great, fill her up, and still look decorative? After trial and error, I discovered that her favorite hummus (Sabra) Roasted Red Pepper Hummus looked great and tasted great whipped into an egg white bottom of a Deviled Egg. We did not waste the yolks. My husband ate those! My daughter loved it and I could still add it to the pastry bag (or even the plastic bag with the little hole cut into it) to make it pretty, plus the roasted red pepper topping in the container looks festive, so I scoop a bit of that and put it on the top for a splash of color, or sometimes I add little slices of red pepper for extra "dipping" for the extra hummus. This even packs well in an insulated lunch plastic container in her bag, and she does not get the odd looks of "what is that" from her friends. A win win!

I love deviled eggs! I add minced red onions, garlic, jalapenos, mayo, spicy mustard, creole seasoning, fresh ground black pepper, smoked paprika and I usually top them with some cilanctro!! Yummy!

I would take my favorite sandwich and turn it into a deviled egg... The BLT EGG. I make it with crispy crumbled bacon, Cousin's Creole Tomato dressing and some fresh sweet basil! So delicious!

The best enhancement I do with deviled eggs is to first pickle the hard boiled eggs. Leave the hard boiled eggs in pickled beet juice for at least 2 days. When you take the eggs and get ready to work with the yolks, you have a lovely puple outside next to the white then the yummy insides....It's the best and a great tradition in our family. P:riscilla

I love deviled eggs. They have become a staple of the holiday table. I love to add a little garlic powder and curry powder then to top it off I add some chopped chives. this combo might not be for everyone but for us it is a winner!

First of all, I cook my hard boiled eggs the same way in your Learn to Cook demonstration. My favorite fillings are chopped sweet pickle, salt, fresh ground pepper, plain yogurt, a dollop of mayonnaise & Dijon mustard. Mash yolks with above ingredients. Stuff whites and top with fresh chopped dill and smoked paprika.

Devil eggs is my go to when I bring food to a party. It is inexpensive and quick to make and everyone loves. I always use summer is coming and deviled eggs are mustard, mayo relish to make my defiled eggs. I have a tray that is made for delved eggs. It's bright yellow with an oval spot for each egg. After I mix all the ingredints I place each egg on the tray. For additional color paprika on each egg. My deviled eggs are the first to be eaten at every party.

I top off my deviled egg with Tastefully Simple's Bacon Bacon. It tastes just like bacon, but it's made with soy. Eggs + bacon = yummy!

Last Easter I was asked to bring deviled eggs. I made a normal batch. Then I made some just for me with something that I love. Fresh CILANTRO. The filling turned out green so they were easy to tell which ones were "mine". Out of two dozen eggs, I got exactly one HALF! Seems I'm not the only one that likes cilantro. It is such a strong flavor that a lot of people just don't care for it. I didn't think the kids would like them at all. And one person, who does not like cilantro was eating them with BOTH hands! I just added it to the yolk mixture and put it in the kitchen aid chopper with the mayo and mustard. Sometimes I add a spoon of sun dried tomatoes to that mix. Sometimes just lots of fresh cilantro.

I don't make deviled eggs often because my version is not so easy! It includes bacon crumbles, minced onion, garlic, celery salt, pepper, and sprinkle of paprika. Ok, maybe the ingredients list is not scary but I can never use less than 18 eggs at a time!

Deviled egg filling is delicious mixed with some mashed avocado & salsa. Another variation also like is to mix in chopped smoked salmon, dill & chives with the filling. Delicious!

Mayo, Dijon and fresh cracked black pepper mixed until smooth. Blend in crispy crumbled pancetta. Top with a bit more crispy pancetta and a small homemade Parmesan crisp and fresh parsley. Lightly dust with smoked paprika.
