Darned Good Deviled Eggs

When I was pregnant with my second child, I craved hardboiled eggs. At first, I ate them plain or with a sprinkle of sea salt flakes. Then I used them as a sandwich filling at breakfast or lunch. Finally I started making deviled eggs for one…well, technically two. My experimentations with deviled egg recipes ranged from using dry mustard to capers to bacon to chives. As many deviled eggs as I ate from one trimester to the next, I never did get sick of them.

Served as an hors d'oeuvre, enjoyed with a simple mixed salad for a light lunch or gobbled up by an expectant mother as an afternoon snack, deviled eggs are quick, easy and delectable. They seem like a simple classic crowd-pleaser, yet they have more variations than meet the eye.

Before sharing our secret ingredients, let’s agree that the hard boiled eggs recipe must be mastered first because no one likes overcooked, rubbery eggs. No one. You have to try this one! In your standard yolk & mayonnaise filling, add smoked paprika for a smokey flavor, minced capers for a briny, salty tang, and a squeeze of lemon and chopped parsley for freshness. Top it off with thinly sliced smoked salmon! It's the perfect marriage for a deviled egg!

Plain Greek yogurt, dill relish, salt & pepper, pinch of cayenne, thinly sliced green onion tops to garnish - nothing fancy but so good.

For St. Patrick's Day I mix a fresh, ripe Avocado into the yolk mixture to make them look "Irish." A sprig of fresh sprouts on top looks like a four leaf clover!

Chop the egg yolk and mix with mayo, bay seasoning, sweet relish and pepper. Stuff eggs and garnish with fresh chopped dill from the garden.

Guacamole stuffed eggs. 6 hard cooked yolks halved. Remove Yolks and save for another purpose. 1 mashed guacamole mixed with several tablespoons of Salsa (quantity depends on consistency of salsa). Scoop into cooked halved egg whites. YUM!

half dozen eggs 1/2 dijon mustard 2 tsp finely chopped onion 2 tsp pickle relish 2 heaping tbs Hellman's mayo dash of fresh ground pepper sprinkle of paprika Put eggs into a medium pot, cover by 1 inch with water and bring to a boil over medium-high heat. Cover and set aside off heat for 12 minutes. Peel and halve eggs. Transfer whites to a platter and yolks to a large bowl. combine all other ingredients except paprika and mash. Spoon some of the yolk mixture into each egg-white half, sprinkle with paprika and enjoy.

I just want to share this recipe with you for the deviled egg recipe. Use 364 mustard and mayonaise, finely chopped cilantro, powdered garlic & onion, finely chopped fresh jalepeno peppers remove seeds and for added color chopped red bell peppers or pimentos. Salt to taste. Mix all together with yolks and refrigerate till cold. Stuff eggs and sprinkle top lightly with a splash of chile powder. Thanks, Gloria

My secret for the perfect Deviled Egg? A pinch of Garlic Powder, a touch of Dijon Mustard and chopped fresh dill. Simple yes. but the combination of dill, Dijon and garlic packs a powerful punch. When I make Deviled Eggs I have to make them by the dozens, my family and friends can't get enough!
