bruscetta- Mix diced tomatoes, chopped basil and garlic. Add olive oil and season with sea salt and pepper. Place on toasted italian bread with a bit of shredded mozzarella. It's hearty enough to last until dinner! Mmmmmm.

Cannot beat ants in a log. You can do it many ways: - Classic: celery with ANY nut butter and Raisins - Twists: Use a carrot, pretzel stick or dried grit strips as logs and dried cranberries, cherries, or nuts as ants! No utensils required to eat. And kids will love being a part of making them. Which is important in raising healthy eaters and little cooks!

I love using whole wheat tortillas for all kinds of snacks in my son's lunchbox. Chilled quesadillas with cheese and leftover meats and veggies, rolled w/ nut butter or sun butter and fruit, layered with cream cheese and veggies, or rolled with sweetened cinnamon cream cheese and apples. Best if all, he loves these snacks too and can help me make them.
