Summertime is the perfect time for easy meals and snacks. A well-stocked pantry can help you feed the crew and get back to the pool, hammock or great summer book more quickly. And when that pantry is stocked with tasty options that are free of artificial preservatives, colors, flavors, sweeteners and hydrogenated fats, you’ve got it made in the shade. This basket is a collection of a few of our favorite healthy snacks and staples so that you’ll be covered when the stomachs in your house start rumbling. Our favorite pantry snack around here is crackers (with cheese and fruit!). I love the Whole Foods brand little wheat thin crackers and so do my kids. We also make little cashew or almond butter crackers with a few raisins on top. Ants on a log without the celery!

It is very hard to eat healthy with so many "convenient bad-for-you" options out there to grab and go! In the summer you will always find jello, dried fruits (especially pitted prunes), nuts and fiber bars. Jello is a staple for me because it is cheap and easy to make and a great snack in the hot summer. The nuts give us the protein our bodies need and all the added nutrients and the dried fruits are just so yummy! I love dried bananas and apples. I always keep soymilk on hand because I make a carnation instant breakfast with soymilk every morning and sometimes I throw in a spoonful of peanut butter for extra nutrition, taste and fun!

I love popcorn! For fun combinations we mix it with M&Ms or mixed nuts. When 3p.m. hits every afternoon, the kids and I start rumaging through the pantry, and we usually come up with this treat!

My four year old loves to do day trips to the beach, so we'll pack a pantry picnic (homemade pickled veggies, dried fruit, nuts, crackers) That way nothing goes bad in the sun and we can snack all day!

My favorite summer pantry meal is hummus. You can vary the beans. You can add what ever herb is growing in your garden. Then you can spread it on toast or dip into it with what ever veggies you have in the fridge. Yum.

LOVE Whole Foods. I always keep chickpeas in my cabinet. One of my favorite summer sides is Chickpea salad with finely chopped onion, celery, red pepper and cucumber. Toss with your favorite vinegarette and top with crumpled feta cheese. Delicious!

This isn't my OWN recipe, but I came across it and love it. It's for a soft, high protein granola bar. Here's the link http://www.adamspeanutbutter.com/Recipes/Details.aspx?recipeID=5767 My adaptations are that I use raw, local honey, organic peanut butter, organic chocolate chips, I throw in some of whatever nuts I have around, some organic coconut shavings and boost the chocolate flavor with some organic cocoa powder. They are really yummy. Most of the time, I'm just lazy, and will grab a hand-full of raw nuts, a piece of fruit...something that doesn't require thought. Good to have healthy things on hand for grabbing. There is no Whole Foods store where I live, but if I win, I'll give it to my son who lives in L.A. I recently visited the Whole Foods in Santa Monica...BEAUTIFUL.

Mmmmmm. Homemade scones with a fruit spread! Makes a great snack and goes well wih organic tee or coffee in the mornings! I can also give my toddler peices of them and since there are no preservatives or artificial coloring she can enjoy the fruit spread as well. Great snackfor the entire family!

The basket of food looks delicious and very healthy. I have a college student (my daughter) who would love to have that for her apartment pantry when she heads back to school..One of the easy pantry snacks I like is a nut spread (peanut, cashew, etc)with a fruit spread on whole grain bread or crackers. Also a quick salad with nuts, dried fruits and cheeses sprinkled on it makes a great summer lunch. Here's hoping I win!!

Fruit, Cheese, Veggies. Melt the cheese on the Multi Grain Chips. Top with the 365 Salsa. YUMMO and quick. Put beans on top to give it an extra punch. I also use the organic baked beans to top off regualar tortilla chips. Fry up some to Whole foods burger and top the beans with hamburger. Add lettuce, tomatoes and whatever else you like!
