In this course a complete rustic Italian meal is prepared featuring a chicken entree, side dishes and dessert. The course is led by an instructor born into the Italian cooking tradition, who apprenticed at a specialty restaurant in Naples, Italy. Students will assist is preparing chicken scallopine (thin slices of chicken breast sauteed and topped with a reduced white wine sauce and served with sauteed spinach, pancetta and mushrooms), ravioli con zucca (homemade ravioli filled with roasted butternut squash and tossed in a white cream sauce with fresh sage) and an almond and peach tart, followed by the entire meal enjoyed family style. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from northern Italy.
