The concept is hundreds of years old, taking advantage of natural resources from its home region of Japan and providing a fix for those who wanted to preserve their supper without refrigeration. To Americans, however, sushi is a new, mysterious thing- becoming popular on the West Coast in the early 1950s, and going from the shores of the Pacific to the shores of the Great Lakes as few as thirty years ago. With any new cuisine comes mystery, and we’re here to delve into the mysteries of sushi- its terminology, the differences between Japanese and American style sushi, how to make great sushi rice and how to form maki, or rolls, in the comfort of your very own home. Each participant will have the opportunity to learn the maki method, then dive in and choose their own fresh fruits, vegetables and seafood to create three maki rolls. Adding meat to a hot pan or oven seems like a simple thing, but it is in fact a series of complex things going on in that pan that give you a perfect sear, a precise doneness and crispy skin. Luckily, with a few tricks of the trade, proper pan selection, a little patience and a little time, you can turn out restaurant-quality proteins without making a reservation or paying through the nose. The first step to cooking great meat is to find a great butcher, and we’ve got you covered. In this class, we’ll tour the meat department and meet our knowledgeable and helpful meat Team Members, who can guide you through a department full of the best meat in town. This class will be taught by Chef Ani. Cheap, versatile and plentiful, we add leeks, garlic, onions, shallots and other members of the allium family to many of our dishes without a second thought. They’re part of a traditional mire poix for soup, sauces, and many more dishes, but cooks often balk at the idea of a dish that allows onions and their kin to be the dominant flavor. This is a shame, because onions, shallots, leeks and the like are easy to work with and can provide a wide range of flavors and textures depending on the manner in which you cook them. Discover the sweet, musky, savory magic that alliums possess and how to take them from back-up singer to main attraction. Other lessons learned will include how to cut onions, tear free, how to preform basic cuts such as the slice, dice, mince and julienne, and how to make a compound butter. This class will be taught by Chef Ani. Beans and legumes are some of the powerful things you can have in your pantry- and on your plate. With a long and illustrious history of feeding hungry gourmets on the cheap, beans and legumes figure into almost every culinary culture on Earth, and with good reason. They’re an excellent source of lean protein, fiber and complex carbs that are low in calories and contain no cholesterol. They’re neutral in flavor, so they can blend seamlessly into dishes, adding a creamy texture and subtle earthiness to everything from appetizer to dessert. In this class, we’ll discuss soaking beans, how to cook them by many methods including braising, pressure cooking, slow cooking and boiling, when to use dry vs. fresh beans, and how to pick the right bean or legume for your dish. You will also learn how to toast and mix your own custom spice blend for jazzing up everything from beans to broccoli. Chef Jeremy will demystify many of the cooking techniques we use every day by explaining a little of the science behind what happens while we cook. We will discuss the best techniques and tips for getting the results we want as we learn why it happens. We will also discuss Harold McGee’s book by the same name as we experiment and theorize while enjoying some wonderful food. This class will be taught by Chef Ani. All year long, basic citrus is available. We might add some lemon to tea or lime to guacamole, and enjoy its tang, but citrus has a lot more to give, especially in the winter, when produce bins are piled high with a plethora of cold weather citrus varieties. Not only is citrus a delicious way to season a dish, but adding tart, complex citrus juice or zest to a dish can actually enhance other flavors in your dish, giving you a deeper, more complex flavor overall. In this class, we’ll catalog the wide variety of citrus fruits that we stock here in our store, dissect a citrus fruit to discuss its useful culinary parts and discuss some must-have tools for getting the most out of your citrus fruits. In Rome, veal and pasta rule the day. But in Chef Ani’s (biased) opinion, the best food can be found on the Italian island of Sicily. Using popular Sicilian ingredients like blood oranges, pistachio, eggplant and saffron, we’ll whip up an aromatic feast that celebrates the sweet, sour, bold flavors of the region.
