Matching food and wine is all about pleasure, with a few common-sense principles sprinkled in along the way. This four-course tasting dinner incorporates a spectrum of food categories with pairings to illustrate both basic rules of thumb and exactly how flexible wines can be. MENU: Oysters and Muscadet; Pinot Noir and Salmon; Bordeaux and Lamb; & Sherry and Citrus with Vanilla. $59
