Whole Foods Market kicks off the Local Food Summit with a screening of the acclaimed movie, The Greenhorns which focuses on the new generation of farmers at the heart of the nation’s local food movement. Following the movie, participants can meet with representatives from the Michigan Young Farmers Coalition and enjoy light refreshments from Whole Foods Market. One hundred percent of the proceeds benefit Slow Food Huron Valley. Tickets are available at the Michigan Theater box office from 7 p.m. on event night. This year’s Local Food Summit :(Re)Imagining a Fair Food System is slated for the following day - Friday, February 22.

Pasta is more than just a delicious entrée or side dish; it’s an essential part of Italian culture. Italians have been creating pasta dishes for generations, varying the shapes and sauces to reflect regional traditions. In this class, led by our native Italian cooking instructor, you’ll prepare and enjoy fettuccine (tossed with sauteed spring artichoke hearts and topped with parmigiano cheese); pappardelle (ribbed egg pasta tossed with sauteed shrimp and asparagus tips in a white cream sauce); fusilli (tossed in a fresh tomato sauce with bits of prosciutto, dry champagne and fresh herbs, topped with pecorino cheese). Calamari are stuffed with homemade breadcrumbs and fresh herbs, then simmered in white wine. Swordfish is pan seared and topped with a pistachio sauce. Roasted Bell Peppers are made into a salad tossed with olives, capers and fresh herbs. Budino di Ricotta, a fresh ricotta cheese pudding adds the perfect final touch.
