Whole Foods Market has partnered with Herve Mons, one of the most well respected French affineurs, who selects Camembert exclusively for us from small producers near the lush green pastures of Normandy and then oversees the aging process. Our cheese buyer visited Mons this spring and interviewed him on the process, region, and cheese.
