Apricot and Tamari Grilling Marinade

Maple syrup and fruit-sweetened apricot jam join with garlic, shallot and ginger in a white wine and tamari base for an out-of-the-ordinary marinade. Try on tofu, chicken or thick slabs of eggplant.

Ingredients
- 1/2 cup low-sodium tamari
- 1/2 cup white wine
- 1/4 cup fruit-sweetened apricot jam
- 2 tablespoons maple syrup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 3 cloves garlic
- 1 small shallot, roughly chopped
- 1 (1/2-inch) piece fresh ginger, peeled and sliced
Method
Place tamari, wine, jam, syrup, Worcestershire, vinegar, garlic, shallot and ginger in a blender or food processor and purée until almost smooth, with just a few chunky bits of ginger and garlic in the marinade.
Transfer marinade to a wide, shallow dish with the meat, vegetable or tofu of your choice.
Cover and refrigerate for at least 1 hour before grilling.
