Ingredients

    1ripe avocado, mashed
    1/4 cupchopped fresh cilantro
    2 tablespoonslime juice
    2 cans (15-ounce)no-salt-added black beans, rinsed and drained
    4 cupsshredded romaine lettuce
    1 cupgrape tomatoes, halved
    1 cupcorn kernels, thawed, if frozen
    1 smallred bell pepper, chopped
    1/2 cuptoasted pumpkin seeds

Method

In a large bowl, whisk together avocado, cilantro and lime juice until blended.
