Buttermilk Chess Pie

This classic Southern pie is a treat with seasonal berries or stone fruits on top. Using a premade pie shell and blender makes it a snap to prepare.

- 1/2 cup (1 stick) unsalted butter
- 5 ounces low-fat buttermilk
- 1 cup sugar
- 1 1/2 teaspoon all-purpose flour
- 1 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 3 large eggs
- 1 9-inch premade pie shell
Method
Preheat the oven to 350°F.
Gently melt butter in a saucepan.
Once melted, stir in buttermilk and set aside.
Combine sugar and flour in a blender and pulse until combined.
Add melted butter mixture, vanilla, and salt and blend.
Add eggs, one at a time, blending until well combined.
Pour batter into crust and bake for 35 to 45 minutes, until the pie is just set in the middle.
Cool on a rack before serving.
