Cashew Cream
Makes about 2 cups

This sweet vegan cream is great as a dip for fruits or used as a layer in parfaits. Experiment with adding lemon zest, almond extract or ground spices.

Ingredients
- 1 1/4 cup raw cashews
- 2 tablespoons honey or agave nectar
- 1 teaspoon pure vanilla extract
- Pinch fine sea salt
Method
Place cashews in a bowl and cover with warm water. Let sit 2 hours to soften.
Drain soaked cashews and discard liquid.
Place cashews, 3/4 cup water, honey, vanilla and salt in a blender and purée until smooth.
Refrigerate in an airtight container up to 3 days.
