Method:
Preheat oven to 400°F. Lightly grease with canola oil or line a baking sheet with parchment paper. In a small bowl, beat eggs. In a large plate or shallow bowl, combine breadcrumbs, herbs and plenty of salt and pepper. With one hand, dip each chicken piece into the egg, shaking off any drips, then place in the bread crumb mixture. With the other hand, pat the coating on both sides of the chicken and place on the prepared baking sheet. Repeat with the remaining chicken fingers. Bake 12-14 minutes or until crisped, browned and cooked through.
Prepare tater tots according to package directions and serve with plenty of ketchup for dipping.
