    Method:

Marinate tofu in Soy Ginger Sauce for 1/2 hour. While tofu marinates, toss greens in vinaigrette. Set aside. Grill tofu, turning once after a few minutes, to cook on both sides. Remove to a plate. Prepare sandwiches with mayonnaise and/or mustard, 2 slices of the grilled tofu, one quarter of the greens, one quarter of the red peppers, and an ounce of the cheese, if using.
