Creamy Chipotle Dip

Makes about 1 cup

Serve this smoky dip with tortilla chips or spread it on tortillas and top with shredded chicken to make tacos. Remove and discard seeds from the chipotle peppers for less-spicy results.

    Ingredients: 
    • 8 ounces Neufchâtel cheese, softened
    • 1/4 cup chipotle peppers in adobo sauce, roughly chopped, more or less to taste
    • 1/4 cup cilantro, chopped
    • 1 thick green onion or two thin ones, chopped

    Method: 

    In a food processor, combine cheese with peppers and adobo sauce until thoroughly combined. This will probably require scraping down the food processor bowl sides a few times. Pulse in the cilantro and green onion until combined.
