Fresh Melon Salsa

Take advantage of ripe melon to create this refreshing fruit salsa with subtle heat from a hint of jalapeño. Serve atop grilled meats or tossed into lettuce salads.

- 3 cups diced melon such as cantaloupe, honeydew and/or watermelon, seeds removed
- 1/4 small red onion, finely chopped
- 2 tablespoons lime juice
- 2 tablespoons finely chopped fresh cilantro
- 2 teaspoons finely chopped jalapeño pepper
Method
Combine melon, onion, lime juice, cilantro and jalapeño in a medium bowl. Serve immediately.
