Green Lentils with Salmon and Apples

Salmon pairs wonderfully with green lentils and tart apples. You’ll find truRoots organic dried sprouted lentils on the grocery shelf, but if you use regular green lentils, increase the lentil cooking time to about 30 minutes.

    Ingredients: 
    • 1 cup truRoots Organic Sprouted Green Lentils
    • 1/2 cup thinly sliced shallots
    • 1 clove garlic, finely chopped
    • 2 Granny Smith apples, cored and chopped
    • 6 tablespoons apple cider vinegar, divided
    • 1/8 teaspoon ground black pepper
    • 1 (8 ounce) boneless, skinless fillet responsibly farmed salmon

    Method: 

    Bring 3 cups water to a boil in a medium pot. Add lentils and cook 5 minutes. Remove from heat, cover and let stand about 5 minutes or until tender. Drain and set lentils aside. In the same pot, bring 1/2 cup water to a simmer over medium-high heat. Add shallots and garlic and cook 5 minutes or until tender. Stir in apples and 2 tablespoons vinegar. Cover and cook 2 minutes. Uncover, stir in lentils and pepper and continue to cook 2 minutes or until lentils are heated through, stirring frequently.

    Meanwhile, fill a pot or skillet deep enough to hold salmon with enough water to cover by about an inch of water. Add remaining 4 tablespoons vinegar and bring water to a simmer. Place salmon in water. Keep water at a light simmer and cook until salmon is just opaque in center. Allow about 10 minutes per inch thickness of salmon fillet. Carefully remove salmon fillet from water and flake into bite-size pieces. Serve salmon over lentil mixture.
