Grilled Sausage and Pepper Salad

Move beyond the bun and enjoy grilled, house-made Italian sausage, feta cheese and sweet, roasted peppers in a green salad that is ideal for summertime eating. Optionally, serve with crusty bread and oil and vinegar on the table.
Ingredients
- 4 fresh pork or turkey Italian sausages
- 1/2 white onion, cut into thick rings
- 1 head romaine lettuce, chopped
- 4 ounces feta cheese, crumbled
- 3 jarred fire roasted red peppers, drained and chopped
Method
Prepare a grill or grill pan for medium-high heat cooking.
Grill sausages and onion, turning occasionally, until onion is tender, 8 to 10 minutes, and sausages are cooked through, 15 to 20 minutes.
When cool enough to handle, slice sausages thickly on the bias and cut onion into chunks.
Toss romaine, feta and red peppers in a large bowl.
Spoon romaine mixture onto plates and top with sausages and onion.
