Honeydew and Poblano Salad with Smoked Salt and Mint

This melon salad makes a terrific side or starter for a warm-weather meal. Make an even smokier version of this salad by first charring the poblano whole on the grill or over the flame of a gas burner before removing the stem and seeds.

Ingredients
- 1 1/2 tablespoon lime juice
- 1 poblano pepper, seeded and diced*
- 1/2 honeydew melon, peeled, seeded and diced (about 5 cups)
- 2 small pickling (Kirby) cucumbers, diced
- 1/4 cup chopped fresh mint
- 1/4 teaspoon smoked sea salt
Method
In a large bowl, toss together lime juice and poblano.
Add honeydew, cucumber and mint, and toss again.
Sprinkle with smoked salt and serve.
* If poblano peppers aren't available, substitute a small green bell pepper and a pinch of cayenne pepper.
