Oat Bran Banana Bread

The bananas you use to make this classic comfort food should be very ripe. To make banana-nut bread, stir 1/2 cup chopped pecans or walnuts into the batter before pouring it into the pan and baking.

Ingredients

    1 cupwhole wheat pastry flour
    1/2 cupall-purpose flour
    1/2 cupplus 2 tablespoons oat bran
    1 1/2 teaspoonsbaking powder
    1/2 teaspoonbaking soda
    1/2 teaspoonfine sea salt
    2very ripe bananas, mashed
    1/4 cupcanola oil
    3/4 cupplus 1 tablespoon frozen apple juice concentrate, thawed
    1 teaspoonvanilla extract
    1/3 cupnonfat milk or soy milk
    2 tablespoonsnonfat plain yogurt

Method

Preheat the oven to 375°F. Grease a 9x4-inch loaf pan; set aside.


In a large bowl, whisk together flours, oat bran, baking powder, baking soda and salt, and set aside.


In a separate bowl, whisk together bananas, oil, apple juice, vanilla, milk and yogurt.


Add banana mixture to flour mixture and stir just to combine.


Pour batter into prepared pan and bake until the top is golden brown and a toothpick inserted into the center of the loaf comes out clean, about 40 minutes. Set aside to cool slightly before slicing.
