Ingredients

    1/2 cupextra-virgin olive oil
    1/4 cupunsweetened pomegranate juice
    1 tablespoonlemon juice
    6large fresh basil leaves or 1 teaspoon dried basil
    1/2 teaspoonDijon mustard
    1 clovegarlic, crushed
    1/4 teaspoonfine sea salt

Method

In a blender, combine oil, juices, basil, mustard, garlic and salt, and process until smooth. 


Taste and adjust seasoning, if needed. 


Use dressing immediately or cover and refrigerate.
