Potato and Carrot Kugel

Cut this potato-based kugel into squares and serve as a side dish at brunch, lunch or dinner.

    Ingredients: 
    • 6 large (or 4 pounds) russet potatoes, peeled and grated
    • 4 carrots, grated
    • 1 large onion, finely chopped
    • 3 large eggs, beaten
    • 6 tablespoons matzo meal
    • 2 tablespoons chopped parsley
    • 1 3/4 teaspoon fine sea salt
    • 3/4 teaspoon freshly ground black pepper
    • Canola oil, for pan
    • 1 1/2 teaspoon paprika

    Method: 

    Preheat oven to 375°F. In a large bowl, combine potato, carrots and onion. Stir in eggs until well mixed. Stir in matzo meal, parsley, salt and pepper. Pour into an oiled 9x13-inch pan, filling to the top (it will shrink); sprinkle with paprika. Bake 1 hour or until browned.
