Shrimp with Pineapple-Ginger Dipping Sauce

Spicy, sweet and tangy, the sauce would also be good with ham.

Ingredients
- 2 cups 1/2-inch cubes pineapple
- 3 tablespoons apricot fruit spread
- 3 tablespoons lime juice
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chopped fresh ginger
- 3/4 teaspoon sriracha sauce, or more to taste
- 1/2 teaspoon fine sea salt
- 2 dozen medium (31/40) peeled and deveined, tail-on cooked shrimp
Method
In a food processor, combine pineapple, apricot spread, lime juice, cilantro, ginger, sriracha and salt; purée until smooth.
Transfer to a bowl and serve with shrimp on the side for dipping.
