Ingredients

    2 cups1/2-inch cubes pineapple
    3 tablespoonsapricot fruit spread
    3 tablespoonslime juice
    2 tablespoonschopped fresh cilantro
    1 tablespoonchopped fresh ginger
    3/4 teaspoonsriracha sauce, or more to taste
    1/2 teaspoonfine sea salt
    2dozen medium (31/40) peeled and deveined, tail-on cooked shrimp

Method

In a food processor, combine pineapple, apricot spread, lime juice, cilantro, ginger, sriracha and salt; purée until smooth. 


Transfer to a bowl and serve with shrimp on the side for dipping.
