Shrimp Salad with Lemon Dressing

Shrimp provide the base for this simple salad including beans, bell pepper and red onion in a citrus dressing. This salad can be made several hours ahead of time. Add the fresh basil just before serving.

Ingredients

    1 1/2 poundscooked, peeled and deveined medium or large shrimp
    1 can (15-ounce)cannellini or kidney beans, rinsed and drained
    1red or yellow bell pepper, seeded and thinly sliced
    1/2 largered onion, thinly sliced
    6 tablespoonsextra-virgin olive oil
    3 tablespoonslemon juice
    1/2 teaspoonfine sea salt
    1/2 teaspoonground black pepper
    1/2 cuppacked fresh basil leaves, shredded

Method

Combine shrimp, beans, bell pepper and red onion in a large bowl. 


Whisk olive oil, lemon juice, salt and pepper to combine in a small bowl. 


Toss dressing with salad. Fold in basil leaves and serve.
