Spinach and Strawberry Salad

A perfect addition to any spring celebration, this salad is dressed in a light vinaigrette and tossed with fresh strawberries, walnuts, avocado and tomatoes.

Ingredients
- 1/2 medium shallot, finely chopped
- 2 tablespoons raspberry or champagne vinegar
- 3 tablespoons extra-virgin olive oil
- 8 ounces baby spinach (plus whatever greens you have on hand)
- 1 cup strawberries, thinly sliced
- 1/2 cup walnuts, toasted and chopped
- 1 medium ripe avocado, sliced
- 2 teaspoons Dijon mustard
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 1/4 cup thinly sliced red onion
- 1 cup cherry tomatoes, sliced in half
Method
In a large bowl, whisk together shallot, vinegar, mustard, salt and pepper.
While whisking constantly, drizzle in oil to make a vinaigrette.
Add red onions and allow to marinate in the vinaigrette for 5 minutes.
Add greens, strawberries, walnuts, tomatoes and avocado; gently toss to combine. Serve immediately.
