Spinach and Strawberry Salad

A perfect addition to any spring celebration, this salad is dressed in a light vinaigrette and tossed with fresh strawberries, walnuts, avocado and tomatoes.

Ingredients

    1/2 mediumshallot, finely chopped
    2 tablespoonsraspberry or champagne vinegar
    3 tablespoonsextra-virgin olive oil
    8 ouncesbaby spinach (plus whatever greens you have on hand)
    1 cupstrawberries, thinly sliced
    1/2 cupwalnuts, toasted and chopped
    1 mediumripe avocado, sliced
    2 teaspoonsDijon mustard
    1/4 teaspoonfine sea salt
    1/4 teaspoonground black pepper
    1/4 cupthinly sliced red onion
    1 cupcherry tomatoes, sliced in half

Method

In a large bowl, whisk together shallot, vinegar, mustard, salt and pepper.


While whisking constantly, drizzle in oil to make a vinaigrette.


Add red onions and allow to marinate in the vinaigrette for 5 minutes.


Add greens, strawberries, walnuts, tomatoes and avocado; gently toss to combine. Serve immediately.
