Strawberry-Balsamic Dressing

This flavorful fat-free salad dressing is great over spinach and arugula, and it's also delicious as a dip for pear or apple wedges or raw vegetables.

Ingredients
- 2/3 cup sliced strawberries
- 1/4 cup balsamic vinegar
- 1/2 shallot, chopped
- 2 teaspoons fresh thyme leaves
- 1 1/4 teaspoon Dijon mustard
- 1/4 teaspoon ground black pepper
Method
In a blender, combine strawberries, vinegar, shallot, thyme, mustard, pepper and 1/4 cup water.
Blend until very smooth.
