Turkey Nachos with Cranberry Salsa

These nachos are a fun and tasty way to use turkey leftovers, and the sweet-and-savory cranberry salsa will wow your crowd. Watch our how-to video.
Ingredients
- 2 cups chopped cooked white and dark meat turkey (about 1/2 lb)
- 2 teaspoons taco seasoning
- Canola spray oil
- 8 ounces baked or traditional tortilla chips
- 1 (8-ounce) package shredded Monterey Jack cheese
- 1 cup whole berry cranberry sauce
- 1/2 medium red onion, chopped
- 1/4 cup chopped fresh cilantro
- 3 tablespoons lime juice
- 1 or 2 jalapeño peppers, seeded and finely chopped
Method
Preheat the oven to 450°F. In a bowl, toss turkey with taco seasoning. (If using leftover turkey that may be dry, toss with 2 tablespoons water and taco seasoning in a medium pot, cover and heat over medium-low heat until hot throughout, 5 to 7 minutes.)
Spray a large, rimmed baking sheet with oil, and then arrange chips on the prepared baking sheet.
Scatter half of the cheese over chips, and then top with turkey and remaining cheese.
Bake until melted, about 5 minutes.
Meanwhile, stir together cranberry sauce, onion, cilantro, lime juice and jalapeños in a medium bowl.
Serve nachos hot, with cranberry salsa to spoon over the top.
