Spanish Chickpeas and Chorizo

Serves 4 to 6

This Spanish-influenced dish is equally good using canned chickpeas or ones you've cooked yourself. Serve it as an appetizer with pieces of crusty bread on the side.

Ingredients

2 tablespoons extra-virgin olive oil
1 small yellow onion, thinly sliced
1/2 pound sliced fully cooked spicy chorizo or andouille sausage
1 1/2 cups cooked chickpeas (from 1 can), drained and rinsed
1/8 teaspoon fine sea salt
1/2 teaspoon ground black pepper

Method

In a large sauté pan over medium-high heat, heat olive oil and cook onion 6 to 8 minutes, until golden. Add chorizo and cook briefly, stirring to infuse the oil and onion with flavor from the chorizo. Add beans and cook another 5 minutes. Stir in parsley, salt and pepper and serve.
