Kid-Friendly Tuna Salad with Almonds and Raisins

Serves 4

Canned tuna is an affordable protein option high in essential fatty acids. Add variety to your lunchbox by mixing it with other ingredients besides the classic mayonnaise and mustard. Raisins are a surprisingly sweet touch that kids will love in this modern take on tuna salad.

Ingredients

1 (6-ounce) can water-packed chunk light tongol tuna, drained
1/2 cup low fat cottage cheese
3 tablespoons sliced almonds, toasted
3 tablespoons seedless raisins
2 tablespoons grated carrots
4 leaves green leaf lettuce
8 slices whole wheat bread, toasted if desired

Method

In a small bowl, toss together tuna, cottage cheese, almonds, raisins and carrots until well combined. Layer tuna salad and lettuce between slices of bread and serve immediately or wrap tightly and refrigerate until ready to eat.
