Minted Lime Freeze

Serves 2

On hot summer days, it doesn't get any better than this. Serve these drinks in tall glasses with lots of ice and sprigs of mint for garnish.

Ingredients

2/3 cup lime juice
1/2 cup loosely packed mint
1/4 cup sugar
1 lime frozen fruit bar, stick removed
Sparkling mineral water

Method

Purée lime juice, mint, sugar and frozen fruit bar on highest blender setting. Serve over crushed ice, with a splash of sparkling water.
