Moroccan Mint Tea

Serves 6

Green tea, mint leaves and sugar make for a comforting and refreshing beverage that is an everyday staple in parts of the Middle East.

Ingredients

3 tablespoons loose green tea leaves or 5 green tea bags
1/3 cup sugar, more to taste
1 bunch fresh spearmint leaves, some sprigs reserved for garnish

Method

Bring 8 cups water to a boil in a large pot over high heat. Remove from the heat and add the tea. Cover and steep 4 to 5 minutes. Stir in sugar, then add mint. Cover and steep 5 minutes more. Strain and serve, garnished with mint sprigs.

To serve chilled, allow the tea to cool to room temperature, then transfer to a pitcher, cover and refrigerate until cold. Serve in a tall glass with ice and a mint sprig for garnish.
