Black Bean and Chorizo Soup

Serves 4
Chicken chorizo is a healthy version of the classic pork sausage. Serve soup with a spoonful of sour cream on top and a sprinkling of chopped cilantro.
Ingredients
1 pound chicken chorizo sausage
2 tablespoons extra virgin olive oil
1 onion, chopped
2 cloves garlic, finely chopped
1/2 bell pepper, any color, chopped
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon ground cumin
1/4 teaspoon sea salt
3 cups chicken or vegetable broth
3 cups cooked black beans, drained and rinsed
Method
Simmer chicken sausages in water for 15 minutes. Drain and chop. Heat olive oil in a Dutch oven or soup pot. Add sausages, onion, garlic, bell pepper, crushed red pepper, cumin and salt. Cook, stirring frequently, until vegetables soften, 8 to 10 minutes. Add broth and beans. Bring soup to a boil, then reduce heat to low. Simmer, partially covered, for 15 minutes. Eat as is or serve over whole-wheat couscous or brown rice. Leftover soup will thicken into a stew-like consistency.
