Fresh cut fruit mixed with whole milk yogurt dressing — sweetened with naturally concentrated raspberry juice — delivers a light, refreshing dessert that's sure to please everyone...even "creamy dessert" fans. Choose the ripest, freshest fruit available for this simple, yet delicious treat.
Ingredients
6 ounces plain or vanilla yogurt
1/4 cup raspberry frozen juice concentrate, thawed
1 teaspoon poppy seeds
1 cup chopped apples
1 cup sliced bananas
1/2 cup blueberries
1/2 cup chopped kiwi
1/2 cup sliced peaches
1/2 cup strawberries
5 tsp shredded coconut
Method
In a large bowl, mix yogurt and raspberry juice concentrate until thoroughly combined. Stir in poppy seeds. Add apples, bananas, blueberries, kiwi, peaches, and strawberries and toss gently to coat. Garnish with coconut and serve.
*If you are preparing the salad to serve later, wait until just before serving to cut and stir in apples and bananas since they will brown when exposed to air.
