Miso Salad Dressing

Makes 3 cups

White miso is the most mild and sweet tasting miso and here it blends with tofu to form the creamy silken texture of this dressing, perfect for salads. The taste becomes addictive, though, so you'll likely end up drizzling it on steamed vegetables, potatoes and pasta as well.

Ingredients

1/2 pound extra firm tofu, drained
1/2 cup roughly chopped yellow onions
1/4 cup cider vinegar
1/4 cup chopped parsley
1/4 cup extra virgin olive oil
1/4 cup white miso

Method

Put tofu, onions, vinegar, parsley, oil, miso and 1 cup water into a food processor fitted with a metal blade and process until smooth and creamy. Store in an airtight container in the refrigerator.
