Pear Dessert Burritos

Serves 6

This is a perfect dessert for autumn or winter. Warm flour tortillas keep the fragrant cinnamon- and clove-spiked juice of cooked pears wrapped inside. You may use apples as a substitute if you prefer. From The Whole Foods Market Cookbook

Ingredients

4 ripe pears, peeled, cored and cut into 1/4-inch thick slices
1 cup apple cider
1/4 cup sugar
3 whole cloves
1 cinnamon stick
1 (2-inch) slice orange peel
8 ounces fromage blanc, like triple crème or mascarpone
6 (10-inch) flour tortillas
Mint leaves

Method

Place pears, apple cider, sugar, cloves, cinnamon stick and orange peel in a large saucepan and bring to a boil. Reduce heat and simmer until pears are crisp-tender, 4 to 5 minutes. With a slotted spoon, remove pears and set them aside. Discard cinnamon stick, cloves and orange peel. Bring reserved liquid to a boil and cook until thick and syrupy. Set aside.

Preheat the oven to 350°F. Line a baking sheet with parchment paper or aluminum foil. Place about 2 tablespoons of the fromage blanc in the center of each tortilla and spread out into a 3-inch circle. Top with 3 or 4 pear slices, then carefully roll up the burrito. Arrange seam-side down on prepared baking sheet and bake for about 10 minutes, or just until tortillas begin to brown. Remove to serving plates and spoon some of the reserved syrup over the burritos. Garnish with mint and serve immediately.
