This fish is caught using a gill net, to limit by-catch (fish caught unintentionally while trying to catch other fish) as well as limit damage to the salmon. It is then processed and shipped directly to our stores within 72 hours. Interested customers can watch the cutting, order their steaks, and sample fresh just-off-the-truck grilled fish.
