Big Cheese Tip! Follow Your Nose!

by arabellastation, February 18, 2009 | Permalink

Greetings! When chatting with our cheese buyer this week, he gave me a hot tip on a cheese that’s on sale through February at $4 off a pound for $7.99 per pound. It’s Knight’s Vail from Wisconsin with a washed rind and strong nose. This moist cheese pairs well with a Riesling or Gewurztraminer yet much better with a hoppy beer such as an ale or IPA. A team member loves it as a decadent grilled ham and cheese sandwich.

Here’s the write-up we feature on the sign that will paint a fuller picture: made in Green County Wisconsin, in the lush heartland of America and American cheese making, Knight’s Vail is a cow’s milk cheese that represents the cheese making techniques of the people who settled that area of the country centuries ago. A pleasant distinctively robust flavor.

Enjoy!
