His delicious creations delighted the crowd and here are the recipes:</p>
<p>LOUISIANA PECAN CRUSTED CATFISH (serves 4)<br />
Mix 1/4 cup canola oil, 1 Tbsp. Creole seasoning, 1 Tbsp lemon juice, and 2 tsp. dried thyme.<br />
Rub catfish with half of the mixture and bake in the oven for about five minutes at 475 degrees.<br />
While the catfish is in the oven, mix together 1 cup Panko bread crumbs, 1 Tbsp. parsley, 1/2 cup chopped pecans, 2 Tbsp. parmesan cheese, and the remainder of the oil. Gently press the pecan mixture onto the catfish and continue to cook in the oven until the catfish flakes easily &#8212; about 5 to 8 more minutes.</p>
<p>ROASTED BUTTERNUT SQUASH PUREE (serves 4 to 6)<br />
3 ea whole butternut squash cut in half<br />
3 Tbsp. olive oil<br />
1 Tbsp. dried oregano<br />
1 Tbsp. ground allspice<br />
2 Tbsp. brown sugar<br />
Salt and pepper to taste<br />
Rub each squash half with olive oil then generously sprinkle with your allspice and oregano. Roast in the oven at 475 degrees for thirty minutes and let cool for a minute. Once cooled down, scoop out seeds and discard them. Scoop meat out of the shell and place in a mixing bowl. Season well with brown sugar, salt, and pepper. Serve hot!<span style="font-size: x-small;color: #000080;font-family: Arial"><span style="font-size: 10pt;color: #000080;font-family: Arial"> </span></span></p>

<p>On another note, please mark your calendar to support Ray Brandhurst, a local shrimper who is battling lung cancer with minimal health insurance. Ray is a member of the White Boot Brigade, which we have supported through special fundraisers in our Louisiana, Texas, Tennessee, Alabama, Georgia, North Carolina, and South Carolina stores. His wife Kay sells shrimp at the Crescent City Farmers Market and they have four children.</p>
<p>Chef Michael Farrell from Le Meritage is hosting a Louisiana Wild Caught Shrimp Dinner to benefit Ray and his family Saturday, August 15th from 7 to 10 p.m., which features four courses with wine pairings for $75 per person. Call 504.648.6119 for reservations.</p>

<p>PROSCIUTTO &amp; GOAT CHEESE BALLS<br />
8 oz Caprichio de Cabra Goat Cheese<br />
4 oz. Prosciutto thinly sliced<br />
Pecan Oil<br />
Roll goat cheese into little balls, the size of a large marble. Wrap with prosciutto. Saute in pecan oil for approximately two minutes and serve.</p>
<p>GRILLED PEACHES WITH HONEY &amp; GOAT CHEESE<br />
4 Peaches<br />
8 oz of goat cheese<br />
6T Honey<br />
4T Chopped toasted almonds<br />
Halve and pit peach. Spray with canola oil on cut side and grill for 5 minutes. Mix honey and goat cheese until thoroughly mixed. Fill peach with goat cheese mixture and garnish with toasted almonds and mint. Chill and serve.</p>
<p>GRILLED HALLOUMI AND ROASTED TOMATOES<br />
1 Pack of Halloumi sliced<br />
Olive oil<br />
Roasted red tomatoes by Divina<br />
Spray Halloumi slice with olive oil and grill or griddle until melted but firm. Layer on plate with oven roasted tomatoes and garnish with mint. Serve with crusty bread.</p>

One of the store team leaders (comparable to general manager) used a plank for grilling chicken and it came out incredibly tender and flavorful. You&#8217;ll generally find them in the Seafood Department in addition to grilling displays as they&#8217;re mostly used for fish. Ask a team member for their recipe as they are happy to share and celebrate good food!</p>
<p><span class="entry-content"><span>In addition, from July 1st through the 8<span>th</span>, you&#8217;ll receive FREE one 18 oz. bottle of <span>Stubbs</span> BBQ sauce, 1.25 pounds of Whole Foods Market cornbread, and one pound of classic coleslaw when you purchase one full rack of baby back ribs! </span></span></p>
<p><span class="entry-content">I&#8217;m known as the rib queen in our household and can&#8217;t wait! Also, I prefer to use our 365 charcoal rather than a gas grill although I understand the convenience of using gas. Call me a purist!</span></p>
