3 Ways to Lighten Up With Agave

Agave nectar is now a staple in many homes. This natural, vegan sweetener is extracted from the heart of agave plants. It’s about 25% sweeter than white sugar, yet it has a low glycemic index. With its mild flavor and rich sweetness, agave is easy to love. Whole Foods Market recently introduced raw, organic agave nectar in the 365 brand – it’s a great product at an everyday price.  

 

Agave is perfect for adding to hot beverages and drizzling over your morning oatmeal. Lately, with the warm, spring weather coming, I’ve found it’s the ideal sweetener for light, healthy fare. Here are three of my favorite ways to enjoy agave right now:

 

1/ Revive with Lime

I recently discovered that agave limeade is the perfect drink for me after a hard yoga work-out or long hike. I simply add a squeeze of fresh lime juice and a squirt of agave to a glass of cool water, stir, and enjoy.

 

2/ Carrot & Apple Salad

This salad seems to go well with any meal, but I especially love it for a bright, healthy breakfast. Simply combine the following in a bowl:

apple, grated (I use the large holes on a box grater)

carrot, grated (I use the large holes on a box grater)

raisins

walnuts

lime juice

agave nectar, to taste (just a little)

 

3/ Agave-Mustard Salad Dressing

The default salad dressing in my house is this easy blend that seems to please all palates. Simply combine equal parts of prepared mustard and agave nectar. I use 365 Agave and 365 Dijon Mustard. If desired, dilute with a little white wine vinegar or water. For a richer dressing, I like to add olive oil and white wine vinegar. I use this dressing for all salads, though I’ve noticed it’s especially good on a salad of romaine and chicories that’s been enriched with walnuts, apples, and dried cranberries. (Look for local heirloom chicories from Marin Roots Farm at Whole Foods Mill Valley - they are as delicious as they are beautiful.
