Do you have anyone in your life that reminds you of yourself? I have this amazing auntie who lives this peaceful and beautiful life in Pennsylvania. She opened a The Center for Well Being years ago and she is a massage therapist and a yoga instructor. Her hobbies and passions are integrated in her personal and professional life. Even though she is very Zen she is always on the move. Usually on her bike. Currently you might look at the two of us and see two very different people but I am finding myself going down a similar path.
She recently sent me some books to help me on my vegan journey. I feel incredibly supported and she is a wealth of knowledge. She lives a pretty vegan life. She was even macrobiotic for a time (not a path I am interested in following). I believe that in order to reach your goals it is really important to reach out to your pillars of strength. Luckily for me I have an amazing family so I often turn to them. (I call my parents just about every day and I am not ashamed to admit it. They are my best friends!)
My auntie and I have always been super close and she has an amazing life that I aspire to someday.
Here is a great recipe that my auntie passed onto me:
1 cup cooked quinoa (let cool)
Diced green pepper
Diced Celery
Minced Green onion
Chopped Toasted Walnuts
Pomegranate seeds or dried cranberries
Minced Cilantro
Mix all together and squeeze the juice of two lemons into the mix
