Husband suckered into Diet… will he make it?

So what is this diet all about anyway??

Whole grains take time to cook. The simply steamed whole grains are fantastic for quick weeknight meals. While it’s always cheaper to cook your own, in a pinch it’s a great way to add whole grains into your family’s diet.
The basics of this diet are incredibly simple. We can eat as much food as we want as long as there is no meat, no dairy, no refined flours or sugars and no processed oils. So that’s the stuff we’re avoiding. The list of what we can eat is MUCH longer.

Any vegetable
Any fruit
Any whole grain
Any potato
Any nut or seed

SO there really is a world of possibilities out there. This week the menu will include steel cut oatmeal for breakfasts with dried and fresh fruit mixed in. For lunch there will be big salads and for dinner we will have whole grain spaghetti with a “don’t miss the meat” sauce; a delicious sweet potato, bean and mango dish and a whole wheat veggie pizza without the cheese. Check back tomorrow for some great recipes.

Is a diet like this healthy? A mountain of evidence points to yes. The myth that protein can only be found in meat products is just that, a myth. Kale has more protein per oz than most meats. Broccoli as well. Quinoa is a protein powerhouse. All these plants and grains also have the advantage of being high in fiber as well– meat has NO fiber at all.

To help Rena, Katie and anyone else trying to make healthy choices Whole Foods vienna has devoted half of the salad bar to oil free, simply steamed grains and veggies.

Rena and Katie are approaching this diet slightly differently. Rena is avoiding nut fats as well. Katie, who is still breastfeeding, has decided not to cut fat out of her diet completely. She will get rid of the processed oils, and much of her daily fat consumption will go out the window with the dairy products.

Rena’s Update:

I have been eating strictly Vegan for a little over a week and have already lost over 5 lbs. In addition to this Katie and I are both working out more. The combination really does make you feel good and have more energy. My 2 kids are enjoying the veggie meals as much as they enjoyed meat. There are a lot of great recipes to choose from– and we are coming up with some new favorites that will stick with us even if we don’t stick with the diet forever.

For only $2.99 each our Prepared Foods department now offers oil free dressings. These suckers pack some serious flavor. They are also available on our salad bar. There is an average of 120 calories in a tablespoon of processed oil. These dressings are a great, natural alternative.

Katie’s Update:

So…. I went to Mexico last week. I wasn’t able to stick with the diet 100%, but did my best while eating salads, oatmeal in the room every morning and trying to avoid the tequila. The diet starts in earnest this week, and we are adding one more person to our diet challenge: My husband.

Mike’s Story

I’m not much of a cook, and so I am travelling down this road with my wife, who refuses to cook two dinners a night. That said, I am excited to lose weight and get healthier. My father has had a quadruple bypass and has many other weight related issues. Having just had a son I do not want to risk not being around. I told Katie that I would only share the “before” picture if the “after” picture was really good. That said, here are my stats thus far:

Weight: 205 lbs
Height: 5′10″
BMI: 29 (this is on the upper end of overweight)

I did not even make attempts at healthy eating while in Mexico- seeing it as my last hurrah before Katie forced me onto a diet of twigs and berries. Part of this challenge will be to see whether a guy like me can enjoy a plant based diet.
