House Made Pancetta
I love when our meat department innovates. Not content to sell just cutlets, roasts, steaks and fillets, the Team Members like to get creative with recipes for sausages and oven-ready items. It was very exciting to see house made, uncured pancetta in the case today. Pancetta is made from pork belly, and ours comes from humanely-raised and antibiotic-free hogs. We season the belly with salt, evaporated cane juice, thyme, pepper, garlic, but unlike many commercial pancettas, we don’t use nitrites in the curing process.
You can purchase the pancetta in one solid piece, or you can ask one of our butchers to cut it in quarter-inch slices. Dice the pancetta and cook it as you would thick-cut bacon. Enjoy on tangy salads, roasted vegetables or baked fish. For only $7.99lb, it’s a great deal for locally-made charcuterie.
