Sweet and Tangy Summer Salads!
Mango Season is here!!! Stop by our Produce Department to taste a ripe, juicy mango.. or any tasty fruit you wish! Just ask a Team Member! Here are a couple of my favorite summer salads for you to try… Let me know what you think! -Chandler, Healthy Eating Specialist

Summer Mango Salad
INGREDIENTS
1 cucumber (diced)
2 stalks of celery (diced)
1 medium mango (cubed)
1 medium heirloom tomato (diced)
1/2 cup drained and rinsed black beans
2 scallions, chopped fine
1 lime, just the juice
1 orange, just the juice
1 T finely chopped fresh cilantro
3/4 teaspoon salt
1 jalapeno pepper, seeded and finely chopped
METHOD
In a large bowl, toss all ingredients. Let stand 10 minutes for flavors to blend.
Sweet and Tangy Pineapple-Cucumber Salad
SERVES 4-6 Serve as a side dish or condiment. It’s also delicious rolled into lettuce wraps!!
INGREDIENTS
3 cups chopped fresh pineapple
2 cucumbers, sliced
2 green onions, thinly sliced
1/4 cup roughly chopped fresh mint
1/4 cup lime juice
METHOD
In a large bowl, gently toss all ingredients together and serve!!! YUMMY!!
