Flour Free Pie Crust

Raw Pie Crust

Ingredients:

  • 2 cups of your choice of raw nuts – almonds, walnuts, pecans, hazelnuts, pistachios etc.
  • 1 cup of dried fruit, raisins and apricots work well, so do pitted dates
  • 1/4 tsp sea salt (optional)

 Directions:

  1. Put the raw nuts in a high speed blender or a food processor and blend until nuts are reduced to small crumbs. Add the dried fruit of your choice and sea salt if desired.  Blend again until there are no more chunks of fruit. The end result should look like loose crumbs.
  2. Put the crumbs into a 9-inch pie plate.  Using your hands, press the crumbs into the form of a pie crust creating a small rim around the edge of the top of the plate.
  3. In order to make the crust firm and sturdy, place the pie crust in the freezer for about 15 minutes.
  4. While the crust is chilling – prepare the filling.
  5. This a great crust for any raw fruit pie. It can also be filled with Sweet Potato Pie filling and baked as per your favorite Sweet potato pie recipe.  Note: if baking the crust you want to keep an eye on the edges to make sure it does not burn.  To keep from burning you may wrap foil around the bottom of the pie pan with just enough foil around the edges to keep the crust from burning.
