Greens, Glorious Greens
Greens glorious greens, the wonderful, nutrient laden leaves of simple plants that thrive in wintertime. Is it coincidence that winter serves us up a harvest of nutrient dense foods that support the immune system and build strong bones? Nature is smart. Greens can be a yummy part of nutritious meals in these cold months. Really. Trust me.
Is one of your New Years resolutions to lose weight? Greens have the highest amount of nutrients per pound than any food. Full of vitamin A, K, C, calcium, silica, potassium, iron, and the carotenoids lutein and zeaxanthine, a cup of cooked greens only has 30-50 calories!
Think you can just take an A-C supplement thus avoid all things green? Think again, a study in 1995 and another in 2008 found that greens in particular prevented macular degeneration and cataracts. Benefits were not obtained from vitamin A or C supplements alone or together.
In addition, the combination of silica and calcium in the same meal makes bones strong, not just more calcium dense. Because I’ve seen people get calcium gallstones from calcium supplements, I always suggest eating the foods that contain calcium.
Oh yes, I did mention ‘yummy’. Surprisingly, the traditional methods of cooking greens are the methods that lead to more nutrient absorption. Minerals are better absorbed in the presence of vinegar, and fat soluble nutrients like vitamin A are absorbed in the presence of fat such as olive oil or bacon. Yes! Southern cooked greens are nutritious!
To make things simple, try sautéing some chopped greens (large stems removed) and adding them to scrambled eggs, wild rice, or soup. Combinations I’ve found delicious are kale in eggs or lentil soup; spinach in a quiche or sautéed with garlic and olive oil; mustard greens with potatoes, cauliflower and/or garbanzo beans with curry. Beet greens and chard are delicious steamed and drizzled with red wine vinegar and sesame oil. There are plenty of greens recipes online, start trying them out! It’s easy to add greens to breakfast, lunch and dinner. Try it, you’ll like it!

8513 NE Hazel Dell Ave. Suite 203 Vancouver, WA 98665 360-573-2273 Mill Plain Whole Foods Market does Community Art Project with Aspiring Artist from Harmony Elementary!Our Igloo was constructed with over 650 recycled milk jugs collected by Harmony Elementary School Students. Local Artist Anne Lukas, in store artist Chris Lyon, Parent Volunteer Extraordinaire AGNES & Principle Mary Horn worked with students to create a life size igloo to display at our store. The structure was built using pvc pipe. It gives the structure strength and helps to hold its shape. The milk jugs are held together with hot glue and cellophane tape. The structure was created at Harmony Elementary School inside a classroom, then it was deconstructed into pieces and transported to Whole Foods Market on November 30th. This was a fun project, and the kids had a blast learning some engineering and recycling skills! The best part is that is that it is totally interactive. Kids are welcome to come to our tree lot and play inside the igloo! Here are some pictures of the creation!
