Happy National Applesauce Cake Day!
Celebrate National Applesauce Cake Day with this delicious recipe for Spiced Applesauce Cake with Candied Pecans (Serves 12):
INGREDIENTS
Spiced Applesauce Cake
1 cup (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar
2 teaspoons vanilla extract
3 eggs
3 cups all-purpose flour
1 teaspoon ground nutmeg
1 tablespoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground cardamom
1/2 teaspoon salt
2 teaspoons baking powder
2 cups unsweetened applesauce
1 cup pecan pieces, lightly toasted
1 1/2 cups chopped peeled apple
1 cup apple juice
1/4 cup brown sugar
Candied Pecans
1/2 cup pecan halves
2 teaspoons butter, melted
1/2 cup granulated sugar
METHOD
For the cake, preheat oven to 350°F. Grease the bottom and sides of a 10-inch springform pan with a bit of the butter. Sprinkle with 1/4 cup of the granulated sugar and tap to cover sides and bottom; set aside. Beat remaining butter and 1 3/4 cups granulated sugar with vanilla in a bowl on medium speed for about 5 minutes until light and fluffy, scraping sides as needed. Beat in eggs one at a time. In another bowl, sift together flour, nutmeg, cinnamon, cloves, cardamom, salt and baking powder. At a slow speed, alternate adding flour mixture and applesauce to butter mixture until well combined. Stir in pecans and apples by hand until combined. Pour batter into prepared pan and bake in the center of the oven for about 1 hour and 45 minutes, or until inserted tester comes out clean. Transfer to a rack to cool. In a small saucepan over medium high heat, simmer apple juice and brown sugar until it thickens and reduces by at least half. Brush on top of cooled cake.
Meanwhile, for the pecans, toast pecan halves in the oven on a baking sheet for 5 minutes, then immediately transfer to a bowl and toss with butter, then with granulated sugar. Let cool on a plate, then arrange on cake just after topping with apple juice glaze.

Today, we encourage you to turn “yard work” into “yard exercise!” Believe it or not, gardening is a great way to burn some calories so get out there and get your garden on with these pointers:
- Avoid all-day marathon gardening sessions on weekends by taking breaks.
- Stay hydrated with water…lots of it!
- Always bend from the knees, not your back.
- Alternate your stance and motion as often as possible.
- Use long-handled tools for raking or hoeing and kneel or sit while using hand tools.
